This is Yamada Shoten's most basic sake.
The Gifu-produced Hidahomare is polished at the brewery with attentive care to a 55% ratio. One can enjoy the transformative flavors of this well-balanced sake at different serving temperatures. The smoothness of sake rice, the light mouthfeel, and the aftertaste that dissipates will complement paired dishes well.

It pairs well with rich, umami-filled dishes that use soy sauce or miso: ayu (sweetfish) simmered in sweet-salty sauce, hoba miso yaki (ingredients seasoned with miso and grilled on a magnolia leaf), and ox tail or offal stew.
