A glass that widens at the rim is recommended in order to maximize the fragrance.
It pairs well with white fish sashimi (thinly sliced) with yuzu-ponzu, ayu no segoshi (sweetfish thinly sliced with spine but insides removed) with plum, octopus sashimi, seaweed and crab marinated in vinegar, wine-steamed white fish, winter gourd with crab ankake (starchy sauce), and rice noodle salad.
